Abstract

Den offentliga måltiden är den huvudsakliga matförsörjningen till Sveriges invånare inom vård, skola och omsorg. En stor del av detta utgörs av mat inom äldreomsorgen. Inom äldreomsorgen finns problem med undernäring och svinn av mat idag. I denna kandidatuppsats studeras matens och måltidens betydelse med utgångspunkt från äldre inom den offentliga måltiden. Studien utgår från de äldres perspektiv och som teoretisk utgångspunkt används symbolisk interaktionism samt begreppen måltidssituation och lokal mat. Studien presenterar vad mat och
måltidssituation har för betydelse i ett större perspektiv än för människans grundläggande näringsbehov och mycket diskussion förs kring distributionens påverkan på mat och hälsa. Studierna visar att det finns sammanhang mellan hälsa och måltidssituation. Varm mat serverad i ett
gemensamt sammanhang ger ökad aptit och i förlängningen en bättre hälsa hos de äldre. Studien är utförd i Gävleborgs län i samverkan med forskningsprojektet Innovationsupphandling X – med fokus på äldres måltidssituation. Arbetet bygger på tre delstudier i form av en deltagande observation i Ramsjö, samtal och diskussioner med forskare från Innovationsupphandling X i samband med möten i Gävleborg, samt analyser av tidigare forskning och mediala publikationer.

The public meal is the main food supply for Swedish inhabitants in healthcare, education and care. Much of this consists of food in elderly care. In elderly care today problems with malnutrition and wastage of food is common. In this bachelor thesis the meaning of food and the meal situation among elderly has been focus. The study is based on elderly people's perspective and the theoretical part is based in symbolic interactionism and the concepts meal situation and local food. The study presents the meaning
of food and the concept meal situation in a wider perspective than a man's basic nutritional needs, and much discussion is about the distribution's impact on food and health. The study shows that there are connection between health and the meal situation. Hot meals served in a common
context increase the appetite and ultimately improve the health of the elderly. The study is conducted within the county of Gävleborg in collaboration with the research project Innovationsupphandling X - with a focus on elderly meal situation. The work is based on three sub-studies in
form of a participant observation in Ramsjö, talks and discussions with researchers from Innovationsupphandling X in conjunction with meetings in Gävleborg, and analysis of previous research and media publications.
