Abstract

En stor del av varje individs klimatavtryck består av den mat vi konsumerar. Eftersom det serveras en stor mängd portioner varje dag runt om i landets skolor anser vi det intressant att studera hur pass klimatanpassad skolmaten är idag. Hur ser skolornas miljöarbete ut och finns det förbättrande åtgärder som kan genomföras på området?
Vi har valt att fokusera vårt arbete på den serverade mängden kött och fisk på tre grundskolor, en kommunal och två privata, i Uppsala kommun liksom ursprunget hos dessa animalier. Intervjuer utfördes med ansvariga för upphandling och kostplanering på kommunen, skolkökspersonal samt elever. En fyraveckorsperiod valdes ut på samtliga skolor där matsedeln analyserades angående mängd och serveringsfrekvens av olika animalier. Med hjälp av en Mat- Klimat-lista kunde vi fastställa mängden utsläpp av koldioxidekvivalenter, dock endast för mängden kött och fisk, för varje serverad portion i genomsnitt.
Efter att ha tagit del av litteratur på området har vi märkt att det svårt att särskilja olika typer av animalieproduktion angående hur miljövänliga de är. I princip alla produktionsformer såsom intensiv/extensiv eller konventionell/ekologisk, har både för- och nackdelar och faktorerna som spelar in är många. En ekologisk och/eller extensiv produktion kan vara, trots detta,
att föredra ur miljösynpunkt på grund av en bättre djurvälfärd, bidragande till en ökad biologisk mångfald samt minskad användning av bekämpnings- och gödselmedel. Dock bidrar denna produktionsform till ett högre metanutsläpp. Skolorna i denna undersökning släpper ut mellan 0,63 till 0,81 kilo CO2e per portion beroende på vilken typ och mängd av animalieprodukt rätten innehöll. Om rätten istället skulle innehålla samma mängd baljväxter, med fokus på mängd protein, skulle utsläppet bli runt tio gånger lägre. Därför
rekommenderar vi att skolorna ska införa ytterligare en vegetarisk dag i veckan för att på så sätt minska sitt klimatavtryck. Enligt kostchefen i Uppsala
kommun skulle en sådan förändring möta stort motstånd på skolan. Vår undersökning tyder däremot på att de flesta eleverna har en positiv inställning till vegetarisk mat. Andra åtgärder är att minska mängden kött eller fisk i portionen och istället öka mängden vegetabilier, minska serveringsfrekvensen av främst nötkött och charkuterier samt att försöka köpa in svenskproducerade livsmedel i möjligaste mån.

A great part of the individual carbon footprint consists of the food we consume. A big amount of lunches are served in schools in Sweden each day and therefore we consider it interesting to study how eco-friendly these meals are. How are the schools working with the problems of climate change and environmental issues and are there any improving measures that can reduce their climate impact?
We have chosen to study the served amount of meat and fish, as well as the origin, at three elementary schools, one public and two private, in the municipality of Uppsala. Interviews were conducted with persons responsible for the procurement and planning of the menu at the municipal office and kitchen staff as well as pupils at the schools.
A menu of four weeks was selected at each school and was analyzed concerning the amount and serving frequency of meat and fish. By using a Food-Climate- list we were able to determine the emission of carbon dioxide equivalents, CO2e, for the meat and fish in one average portion.
By studying the literature within the subject we noticed that it is difficult to relate production type (e.g. intensive/ extensive or conventional/organic) to climate impact. In all types of farming there are both advantages and disadvantages and there are a lot of aspects to consider. An organic and/or extensive farming is to prefer in an climate aspect due to its superior animal welfare, contribution to an increased global biodiversity as well as a reduced usage of fertilizers and pesticides.
The results showed that one school meal emits between 0.63 to 0.81 kilos of CO2e, depending on which type of animal product the dish contained. If the dish would contain the equivalent amount, considered the amount of protein, of legumes instead, the total emission would be reduced by a factor of ten. In order to reduce the climate impact we hence recommend that an additional vegetarian day should be introduced in the weekly menu. According to the head of the food department in the municipality of
Uppsala would such change encounter a lot of resistance at the school. However our study shows that a great part of the pupils have a positive attitude to vegetarian food. Other measures that can be taken to reduce the impact is to dilute the meat or fish with vegetables or legumes, reduce the serving frequency of beef and charcuteries and to a high extent serve food produced in Sweden.
