Abstract

Syftet med denna uppsats är att identifiera vilka hinder och möjligheter som finns för svensk
småskalig kvarnverksamhet, med inriktning på ekologiskt producerat kulturspannmål, att öka
produktionsvolymen mjöl. Metoden som används för att samla in material är kvalitativa
intervjuer med fem informanter som bedriver kvarnverksamheter av denna typ.
Informanternas utsagor lägger grunden för det empiriska materialet. Det insamlade materialet
analyseras genom tillämpning av litteratur och av de teoretiska begreppen handlingsutrymme
och kulturellt-, ekonomiskt- och socialt kapital. Resultaten visar att kvarnverksamheter är i
behov av en mångfald av resurser i förmalningsprocessen, och att tillgången till resurserna i
fråga utgör möjligheter och hinder för att öka volymen mjöl genererat av kulturspannmål. Att
samhällets intresse för både produktion och konsumtion av kulturspannmål ständigt växer,
vilket är en essentiell resurs, resulterar i goda möjligheter att öka mjölvolymen. Det finns en
begränsad tillgång till kunskap och materiella resurser, vilket utgör hinder i att öka
mjölvolymen av kulturspannmål. Det är också ett hinder att mjölnarna och odlarna är äldre
samt att det inte alltid finns någon som tar över. Resultatet visar också att förutsättningarna
för att få ekonomisk ersättning för produktionskostnaden upplevs olika sinsemellan
kvarnverksamheterna. Hur möjligheten till ersättning ser ut utgör ett avgörande antingen
hinder eller möjlighet att bedriva en kvarn och både mala samt öka volymen mjöl genererat
av kulturspannmål.

The purpose of this thesis is to identify difficulties and possibilities in regards to Swedish
small scale milling, targeting ecological produced heritage cereals, to increase the production
volume of flour. In order to obtain material, qualitative interviews with five respondents who
conduct mill operations of this type have been conducted. The narratives provided by the
respondents constitute the basis of the empirical material. Further, the obtained material is
analyzed through application of literature and the theoretical concepts: scope for action and
cultural-, economical- and social capital. The results reveal that milling operators require a
diversity of resources in the milling process, and the access to the resources in question
defines difficulties and possibilities to increase the volume of flour generated by heritage
cereals. Due to society's’ interest in both production and consumption of heritage cereals
continually accelerating results in favourable opportunities to increase the production volume
of flour. In contrast, the limited access to knowledge and material resources causes
difficulties to accelerate the flour volume of land cereals. Another difficulty is the general old
age of millers and farmers combined with the lack of successors. In addition, the results
indicate various experiences to obtaining financial compensation for the production expenses.
Depending on how the opportunity to financial compensation manifests, result in a decisive
difficulty or possibility to both operating a mill and increase the production of heritage
cereals.
