Abstract

Idag är det enbart 38 % av Sveriges matavfall som tas till vara på ett sådant sätt att växtnäringsämnena nyttjas. Avfallshanteringen av matavfall kan därför få en betydande roll för näringskretsloppet och därmed även kolkretsloppet. Traditionellt har kompostering varit en vanlig metod för att återföra matavfallet till jorden men i och med att samhällets klimatengagemang ökar börjar andra potentiellt mer effektiva metoder för att återföra näringsämnena samt det organiska kolet att träda fram. Bokashi är en metod som marknadsförs som det klimatsmartare alternativet till kompost då det påstås frigöra mindre kol. Dock saknas vetenskapliga studier som underbygger detta. Huvudsyftet med denna studie var därför att undersöka respirationen från jord behandlad med bokashi och kompost för att jämföra deras kolavgång. Under skapandet av bokashin ska bokashiströ innehållande så kallade Effektiva Mikroorganismer (EM) tillsättas för att skapa en hälsosam miljö som är viktig för omsättningen i jorden. Men även där saknas det vetenskapliga studier som underbygger effekten av inympandet av EM. Därför har denna studie inkuberat tre olika bokashimaterial, ett med levande ymp (BY), ett med avdödad ymp (DY) och ett utan ymp (EY), för att ta reda på EM´s effekt på bokashimaterialens respiration.
En inkubationsstudie genomfördes där respirationen från fyra olika material blandade med jord mättes under fyra veckor. Försöksleden var de tre bokashileden-, BY, DY och EY samt ett kompostled (KOM). Försöket var fullständigt randomiserat med fyra replikat samt två labbreplikat för varje försöksmaterial. För att testa ett generellt respirationsmönster för bokashimaterialet jämfört med kompostmaterialet slogs alla tre bokashileden ihop, medan de tre bokashileden testades sinsemellan för utvärdering av EM-ympens effekt.
Resultatet visade att bokashimaterialet i medel respirerade 20 % mer kol än kompostmaterialet under tiden i jorden. Sett för hela perioden, från råvaran till inkubationsstudiens slut, var respirationen från de två metoderna däremot snarlik. Komposten respirerade totalt 70 % av det tillsatta kolet medan bokashin respirerade 66 % av det tillsatta kolet. Då de båda metoderna alltså respirerade liknande mängd kol blev det svårt att avgöra vilken av behandlingarna som var den klimatsmartaste sett till perspektivet kolinlagring i jorden. Vid jämförandet av de tre bokashileden fanns det inga signifikanta skillnader mellan materialen. Studie stödjer alltså inte att EM skulle påverka jordens aktivitet och med det även respirationen från det nedblandade materialet.

Only 38 % of Sweden’s food waste is currently managed in a way that utilises their content of plant nutrients. The way food waste is being disposed of can have a significant role for the nutrient cycle and therefore also the carbon cycle. Composting is a traditional method of returning food waste to the soil, but as society is getting more aware of climate change, new and potentially more effective methods for returning nutrients as well as organic carbon are advocated. Bokashi is one of these methods and is marketed as a climate-smart alternative to compost as it´s allegedly releasing less carbon. However, this claim is not (yet) supported by scientific studies. The main purpose of this study was therefore to investigate the respiration from soil treated with bokashi and compost to compare their carbon emissions. During the bokashi process, bokashi inoculum containing so-called Effective Microorganisms (EM) should be added to create a beneficial environment which is important for degradation in the soil. However, the effect of inoculation of EM is also lacking support from scientific studies. Therefore, this study has incubated three different types of bokashi materials, one with live inoculum (BY), one with killed inoculum (DY) and one without inoculum (EY), to find out EM´s effect on the respiration from bokashi materials.
An incubation study was conducted over four weeks to measure the respiration from four different substrate types mixed with soil. The substrate types were the three bokashi materials-, BY, DY, and EY as well as one compost (KOM). It was a completely randomized trial with four replicates of each substrate type and two lab replicates for each substrate. To test the general respiratory pattern from the bokashi substrates vs that of the compost, data from all three bokashi types were pooled. The three bokashi types were tested between themselves for evaluation of the effect of the EM inoculum.
The result showed that the bokashi materials on average respired 20 % more carbon than the compost during the incubation in soil. During the whole period, from the raw material to the end of the incubation study, the respiration from the two substrate types was, however, very similar. The compost respired in total 70 % of the added C and the bokashi materials respired in total 66 % of the added C. Both substrates thus respired similar amounts of carbon which made it difficult to determine which of the substrate types that was the most climate-smart, from the perspective of carbon storage in soil. The result showed no significant difference when comparing the respiration from the three bokashi types. Hence, the study does not support the claims about EM´s effects on bokashi´s activity and the respiration of the bokashi material.
