Abstract

Den svenska livsmedelsproduktionen har sedan slutet av 1800-talet varit präglad av stora produktionsvolymer, stora enheter och en åtskillnad mellan produkt och producent. Denna norm för hur livsmedel produceras idag har jag valt att benämna industriproduktionsdiskursen.
På senare år har det dock skett ett intåg av en annan diskurs i livsmedelssverige, som jag kallar för mathantverksdiskursen. Denna diskurs kan ses som ett uttryck för en alternativ diskurs om livsmedelsproduktionen, som förespråkar en annorlunda syn på livsmedel och produktionsvärden.
Syftet med denna studie är att utreda vilka konsekvenser som de båda diskurserna har för småskaliga ostproducenter. Jag utreder frågorna om vilka subjektpositioner och handlingsutrymmen som ryms inom de båda diskurserna, hur olika kunskaper presenteras, samt hur diskurserna är kopplade till en social praktik för småskaliga ostproducenter.
För att besvara syftet och frågorna använder jag mig av kritisk diskursanalys som arbets- och analysmetod, och jag utgår från Norman Faircloughs tankar om disksurs som något avskiljt från en social praktik. Genom att analysera texter från jordbruksdepartementet, regeringen och Eldrimner får jag en förståelse för hur diskurserna tar sig till uttryck. Jag gör även intervjuer med två småskaliga ostproducenter för att få en inblick i produktionens villkor och förutsättningar.
De resultat som jag uppnår visar att det finns tydliga subjektpositioner inom de båda diskurserna, och att producenters handlingsramar blir inskränkta genom dessa. Min studie visar att producenter som bryter mot diskursernas subjektpositioner eller motsätter deras respektive värdesantaganden blir uteslutna eller tillrättavisade. Vidare visar mina resultat att industriproduktionsdiskursen värdesätter en akademisk-teoretisk kunskap, medan mathantverksdiskursen värdesätter en praktisk-produktiv kunskap. Dock så syns en trend inom mathantverksdiskursen att formalisera produktionen och att standardisera produkterna, vilket ökar betydelsen av teoretiska kunskaper inom diskursen. Den sociala praktiken visar dock på att ost i sig är en produkt som kräver både teoretiska och praktiska kunskaper för att lyckas, varför en favorisering av någon av kunskaperna missgynnar produktionen.
Studien visar således att båda diskurserna fungerar inkluderande och exkluderande av olika kunskaper, vilket i sin tur begränsar handlingsutrymmet för ostproducenter. Kanske innebär det även begränsningar för producenter i hela den svenska livsmedelsproduktionen.

Ever since the late 19th century, the Swedish production of food has been characterized by large production volumes, big units and a distinction between the product and the producer. This norm of how foodstuffs are produced in Sweden today I refer to as the industrial production discourse. In recent years a challenging discourse has been introduced in Sweden, which I refer to as the discourse of food craftsmanship. This discourse is to be seen as an expression of an alternative discourse of the production of food, which promotes a different perspective of food and production values.
The purpose of this study is to investigate the consequences that the two discourses have on small-scale cheese producers. I examine which subject positions and acting space that the discourses permit, how different kinds of knowledge are presented, and how the discourses are connected to the social practice of small-scale cheese producers.
I use the theory of critical discourse analysis to answer the purpose and the different questions of this study, more specifically I use Norman Fairclough’s theory of a separation between discourse and social practice. By analyzing texts from the Swedish department of agriculture, the Swedish government and the organization Eldrimner I gain understanding of how the discourses are expressed. I make two interviews with small-scale cheese producers to gain an understanding of the conditions of the production.
The results that I have accomplished show that there are some obvious subject positions within both discourses, due to which the acting space of producers are restrained. My study shows that producers that break the subject positions or question the value assumptions of the discourse are excluded or objurgated. Further on, my results show that the industrial production discourse value an academic-theoretic knowledge, while the food craftsmanship discourse value a practical-productive knowledge. However the discourse of food craftsmanship shows a trend towards formalization of the production and standardization of the products, which increases the importance of theoretical knowledge. The social practice of cheese producer’s show that cheese is a product that demands both theoretical and practical knowledge, why a favoring of either would disfavor the entire production.
This study shows that both discourses work including and excluding of different knowledge, which affects cheese producers by a limitation of acting space. This could mean a limitation for producers in the entire Swedish food production.
