Abstract

Slaktutbyte och köttutbyte speglar det ekonomiska värdet i djur som går till slakt. Slaktutbyte är skillnaden mellan djurets levande vikt innan slakt och slaktkroppens vikt medan köttutbyte är skillnaden mellan slaktkroppens vikt och vikten av köttet på slaktkroppen. Båda uttrycken anges i procent och är vanligt förekommande inom köttbranschen. Ändå finns det få sammanställningar och studier som har gjorts inom ämnet. Det kan vara svårt att jämföra de siffror som finns eftersom rutiner kring uppfödning, slakt och styckning varierar mellan länder samtidigt som det i vissa fall begränsade antalet sammanställningar gör att det är svårt att få fram tillförlitliga uppgifter. Intresset av uppgifterna finns idag också från andra discipliner än husdjursvetenskap som till exempel inom klimat- och miljöforskning. Uppgifterna kan bland annat användas när mätningar kring animalieproduktionens miljöpåverkan ska fördelas på en viss mängd slaktkropp eller kött. Syftet med den här litteraturstudien är att definiera begreppen slaktutbyte och köttutbyte och undersöka vilka faktorer som påverkar dem, samt att sammanställa resultat för slaktutbyte och köttutbyte för nötkreatur och lamm.
Studien visar att det finns många viktiga faktorer som påverkar både slaktutbyte och köttutbyte. Förutom ras, kön och vikt så är ullmängd hos lamm, våmfyllnad och tidpunkterna för vägning av det levande djuret viktiga faktorer som påverkar slaktutbytet. För köttutbytet är bland annat genetik, foderintensitet och fettansättning viktiga faktorer som kan ha stor påverkan på resultatet.

Dressing and meat percentage reflect the economic value of animals who are slaughtered. Dressing percentage is the difference between the animal’s live weight before slaughter and the carcass weight, while meat percentage is the difference between the carcass weight and the weight of the meat on the carcass. Both terms are given as a percentage and are commonly used in the meat industry. Nevertheless, there are few compilations and studies that have been done in the subject. It can be difficult to compare the figures that exist because routines regarding breeding, slaughter and cutting vary between countries, while in some cases the limited number of compilations makes it difficult to obtain reliable data. Today, there is also an interest in the tasks from disciplines other than animal science, such as climate and environmental research. The information can be used, among other things, when measurements of the environmental impact of animal production in the form of emissions are to be measured. The purpose of this study is to define the terms of dressing and meat percentage and to investigate which factors influence them, as well as to compile results for dressing and meat percentage in cattle and lamb.
The study shows that there are many important factors that affect dressing and meat percentage. In addition to breed, sex and weight are also wool growth in lamb, rumen filling and the time for weighing important factors that affect the dressing percentage. Important factors for meat percentage are for instance genetics, feed intensity and fat deposition that can have a major impact on the result.
