Abstract

I Limfjorden på norra Jylland i Danmark finns världens största vilda bestånd av ostronarten Ostrea edulis, det ursprungliga europeiska ostronet. Historiskt sett har Ostrea edulis funnits i rikliga mängder längs hela Europas atlantkust, men har sedan 1800-talet fört en alltmer tynande tillvaro. Idag är det nästan helt och hållet ersatts av ett ostron från Stilla Havet, Crassostrea gigas. Den här uppsatsen undersöker hur relationen mellan ostron och människor vid Limfjorden har utvecklats och förändrats under drygt 7000 år. Uppsatsen undersöker också hur den institutionella inbäddning som omger relationen har utvecklats och förändrats under samma tid och använder sig av Frances Cleavers begrepp institutional bricolage för att förstå hur institutioner skapas genom att låna beståndsdelar från redan existerande institutionella arrangemang. Uppsatsen visar hur den institutionella inbäddningen kring relationen mellan ostron och människor vid Limfjorden formats och utvecklats genom en form av bricolage.

The world's largest wild population of the oyster species Ostrea edulis, the original European oyster, is located in the Limfjord-sound in northern Jutland in Denmark. Historically, Ostrea edulis has existed in abundant quantities along Europe's Atlantic coast, but since the 19th century it has suffered an increasingly dwindling existence and is almost entirely replaced by a Pacific oyster, Crassostrea gigas.
This paper examines how the relationship between oysters and humans by the Limfjord-sound has evolved and changed during 7000 years. The paper also examines how the institutional embedding surrounding the relationship has evolved and changed during the same time, using Frances Cleaver's concept of institutional bricolage to understand how institutions are created by borrowing elements from existing institutional arrangements. The paper shows how the institutional embedding of the relationship between oysters and humans by the Limfjord-sound evolves through bricolage.
