Abstract

Kvalitetsfaktorer som påverkar tomater är smak, utseende (färg, storlek, form), fasthet och näringsinnehåll. Smaken bestäms av den kemiska sammansättningen i tomaten, då främst av totalt lösliga ämnen, titrerbar syra, pH samt förhållandet mellan socker och syra.

Tomat skördas under hela mognadsfasen men för att få fram en så optimal kvalitet som möjligt bör de skördas mogna men fortfarande gröna, tomater är mogna redan innan de fått en röd färg, för att sedan låta mognas fram till den röda färgen i 20 ºC.

Ju senare de skördas desto högre blir förhållandet mellan socker och syra i frukten vilket ger upphov till en mer aromatisk tomat och därigenom få en bättre smakkvalitet. Oftast skördas tomater och mognas fram med hjälp av etylen, ett naturligt hormon som påskyndar mognadsprocessen. Ifall man mognar fram tomaten direkt, utan att först lagra den i lägre temperaturer, påverkas smakkvaliteten genom att tomaten blir mer aromatisk. Oavsett ifall det sker med eller utan etylen.

Postharvest hantering av tomat är en svår men betydelsefull uppgift, för att få fram en så bra tomatkvalitet som möjligt. Framförallt fysiska skador är vanligt förekommande såsom tryck-, skär-, skav- och vibrationsskador under hela hanteringskedjan från produktionsplats till konsument. Frukten kan även angripas av svampar och bakterier vilket kan förvärras om tomaten redan har en skada. Ifall temperaturen sjunker under 12,5 ºC finns det risk att köldskador uppstår, då vanligen röta.

Det praktiska försöket visar att miniplommontomaten San Mazzo har högre sockerinnehåll än kvisttomaten Racimo. Den titrerbara syran är även den högre hos miniplommontomaten men minskar mot slutet av försöksperioden. Likaså minskar den titrerbara syran hos kvisttomaten mot försökets slut. Däremot skiljer sig pH inte nämnvärt mellan de olika tomatsorterna under försöksperioden.

Quality factors affecting tomatoes are taste, appearance (color, size, shape), firmness and nutritional content. The taste is determined by the chemical composition of the tomato, mainly by total soluble solids, titratable acid, pH and the ratio between sugar and acids.

Tomatoes are harvested during the ripening, but to obtain an optimal quality, they should be harvested mature green and then ripen at 20 ºC. The later tomatoes are harvested, the higher the ratio between sugar and acids in the fruit, which results in a more aromatic tomato and therefore a better taste quality. Usually tomatoes are harvested unmature and later let to ripe with the help of ethylene, a natural hormone that speeds up the ripening process. If the tomatoes are allowed to ripe directly without previous storage in low temperatures, the taste quality becomes more aromatic. No matter if it is done with or without ethylene.
Postharvest handling to obtain a good tomato quality is a difficult, but important task. Physical damage is common, such as pressure, cutting, scuffs and vibration damage throughout the handling chain from the production site to the consumer. But the fruit can also be attacked by fungi and bacteria which are more at risk if the tomato already has an injury. If the temperature drops below 12.5 °C, there is a risk that cold injuries occurs.

The practical experiment showed that the babyplum tomato San Mazzo has higher sugar content than the vine tomato Racimo. The titratable acid was higher in the babyplum tomato but decreased towards the end of the trial period. Similarly, the titratable acid in the vine tomato decreased in the end of the experiment. pH however, did not differ considerably between the different varieties of tomatoes during the trial period.
