Abstract
Hållbarhetsarbete har blivit en allt viktigare del av lantbruksföretagens verksamhet, samtidigt som konsumenters efterfrågan på hållbara livsmedel ökar. För gårdsbutiker innebär detta inte enbart att bedriva ett hållbarhetsarbete, utan även att kunna kommunicera värdet av detta arbete till konsumenterna. Tidigare forskning har i begränsad utsträckning undersökt hur lantbrukare i gårdsbutiker kommunicerar värdet av sitt hållbarhetsarbete och vilka utmaningar de upplever i denna kommunikation.
Syftet med studien är att bidra med förståelse för hur värdet av hållbarhetsarbete kommuniceras i gårdsbutiker samt vilka faktorer som påverkar denna kommunikation. Målet är att identifiera utmaningar med miljökommunikationen som ett värdeskapande inslag i verksamheten. Studien genomfördes med en kvalitativ forskningsdesign där tre semistrukturerade intervjuer genomfördes med lantbrukare som driver gårdsbutik. Det empiriska materialet analyserades genom tematisk analys och tolkades med stöd av ett teoretiskt ramverk bestående av miljökommunikation, legitimitetsteori och Consumption value theory.
Resultatet visar att lantbrukarna främst praktiserar sin miljökommunikation genom personliga möten med konsumenter, kompletterat med gårdsbesök och i vissa fall sociala medier.
Hållbarhetsarbetets värde kommuniceras sällan genom generella hållbarhetsbudskap, utan konkretiseras istället genom produktkvalitet, transparens, lokal identitet och djurvälfärd. Samtidigt visar studien att hållbarhet upplevs som ett komplext begrepp, vilket gör kommunikationen
utmanande eftersom olika konsumenter tillskriver hållbarhet olika betydelser.
Studien bidrar med ökad förståelse för hur producenter i gårdsbutiker kommunicerar värdet av sitt hållbarhetsarbete i direkt kontakt med konsumenter. Resultaten visar att miljökommunikation i denna kontext inte enbart handlar om att förmedla information om hållbarhetsarbete, utan om att
göra hållbarhetsarbetets värde begripligt, trovärdigt och relevant genom konkreta värden som konsumenterna kan relatera till.
Sustainability has become an increasingly important aspect of agricultural businesses, while consumer demand for sustainably produced food continues to grow. For farm shops, this means not only engaging in sustainable practices but also communicating the value of these practices to consumers. Previous research has paid limited attention to how farmers operating farm shops communicate the value of their sustainability efforts and the challenges they experience in this communication.
The aim of this study is to contribute to an understanding of how the value of sustainability efforts is communicated in farm shops and which factors influence this communication. The study also aims to identify challenges associated with environmental communication as a value-creating element of the business. A qualitative research design was adopted, and three semi-structured interviews were conducted with farmers operating farm shops. The empirical material was analysed using thematic analysis and interpreted through a theoretical framework consisting of environmental communication, legitimacy theory, and Consumption value theory.
The findings show that farmers primarily practise environmental communication through direct interactions with consumers, complemented by farm visits and, in some cases, social media. The value of sustainability efforts is rarely communicated through general sustainability messages. Instead, it is communicated through concrete aspects such as product quality, transparency, local identity, and animal welfare. The study also shows that sustainability is perceived as a complex concept, making communication challenging because consumers attach different meanings to sustainability.
The study contributes to a greater understanding of how producers operating farm shops communicate the value of their sustainability efforts in direct interactions with consumers. The findings indicate that environmental communication in this context is not merely about conveying information about sustainability efforts but about making the value of those efforts understandable, credible, and relevant through concrete values that consumers can relate to.
