Abstract
We will need to feed two billion additional people by 2050, while also addressing the fact that food
production is one of the most significant causes to global warming. Protein from animal products is
an essential component of worldwide diets, but it also contributes significantly to greenhouse gas
emissions. Potato fruit juice (PFJ) is a byproduct of potato starch manufacturing is a very nutritious
aqueous liquid containing the potato's remaining content. Dried PFJ is high in protein (35 %) and
has a high-quality amino acid profile; nevertheless, due to the high concentration of glycoalkaloids
and phenolics in precipitated potato protein, it is inedible in terms of toxicity and taste. The aim of
this study was to purify the high-quality protein from the potato protein by removal of the unwanted
compounds with ion exchange resins. The study compared different resins for PFJ purification in
order to choose the best performing ones for further investigation. Several resins significantly
reduced the content of phenolics and glycoalkaloids in treated PFJ, with the top performing SAX002
leading to 67 % phenolic-reduction and SCX006 leading to 89 % glycoalkaloid-reduction.
